  • Author: Jake
  • Total Time: 22 minutes
  • Yield: 4 servings 1x
  • Diet: Vegan

Description

This Vegan Custard Toast offers a delightful dairy-free twist on a classic treat, featuring a creamy oat yogurt and egg replacer-based custard baked inside indentations of fresh bread slices, topped with fresh fruit, chocolate chips, and a dusting of powdered sugar for a sweet breakfast or snack.

Ingredients

Scale

Custard Mixture

  • 1/3 cup Egg Replacer
  • 1/3 cup Oat Yogurt
  • 1 tablespoon Agave Syrup
  • Zest of 1 Lemon

Toast

  • 4 slices Bread

Toppings

  • Fresh Raspberry, to taste
  • Chocolate Chips, to taste
  • Banana, to taste
  • Powdered Confectioners Sugar, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (200 degrees C) to ensure it’s hot and ready for baking the custard toast.
  2. Prepare Custard Mixture: In a small bowl, whisk together 1/3 cup Egg Replacer, 1/3 cup Oat Yogurt, 1 tablespoon Agave Syrup, and the zest of 1 Lemon until fully combined and smooth.
  3. Create Indents in Bread: Take each of the 4 bread slices and press the center firmly with your fingers or the back of a spoon to create a shallow indentation for the custard filling.
  4. Fill Bread with Custard and Add Toppings: Evenly distribute the prepared custard mixture into the indented centers of all 4 bread slices. Top each with fresh raspberries, chocolate chips, and banana slices according to your taste preferences.
  5. Bake the Custard Toast: Place the prepared slices on a baking sheet and bake in the preheated oven at 400 degrees F (200 degrees C) for 10-12 minutes, or until the custard is set and the edges are caramelized.
  6. Serve: Remove from oven and serve immediately. Optionally, sprinkle with powdered confectioners sugar to add a sweet finishing touch.

Notes

  • You can substitute egg replacer with other vegan egg substitutes if desired.
  • Use stale bread for better structure and less sogginess.
  • Adjust toppings as per your preference; nuts or seeds can also be added for crunch.
  • Check custard setting at 10 minutes to avoid overbaking.
  • Serve warm for the best texture and flavor.
