This creamy vegan custard is a delicious dairy-free alternative made with custard powder, golden caster sugar, and creamy low-fat coconut milk. Perfect as a dessert topping or on its own, it’s smooth, rich, and easy to prepare on the stovetop.

Custard Mixture
- 4 tbsp custard powder
- 4 tbsp golden caster sugar
- 2–4 tbsp low-fat coconut milk (from a 400ml can)
Liquid Base
- 2 x 400ml cans low-fat coconut milk
- 200ml water
Instructions
- Mix Dry Ingredients: In a medium bowl, combine the custard powder and golden caster sugar thoroughly to create an even mixture.
- Create Paste: Add 2 to 4 tablespoons of coconut milk from one can to the custard powder and sugar, stirring vigorously to form a smooth, lump-free paste.
- Heat Liquid Base: Pour the remaining coconut milk from the first can along with the entire second 400ml can of coconut milk and 200ml water into a pan. Heat over medium heat until the mixture is almost boiling, stirring occasionally to prevent sticking.
- Temper the Custard Paste: Gradually whisk some of the hot coconut milk mixture into the custard paste in the bowl to temper it, ensuring a smooth custard sauce without lumps.
- Combine and Thicken: Pour the tempered custard mixture back into the pan with the remaining hot coconut milk. Return the pan to a low heat and stir continuously until the custard thickens to a smooth, creamy consistency and reaches a boil.
- Finish and Serve: Remove from heat once the custard has thickened. Allow it to cool slightly before serving, or use chilled as a dessert topping.
