Ingredients
Scale
Cookie Base
- 1.5 to 2 pounds of chocolate chip cookie dough
- Unsalted butter for greasing the skillet (about 1 tablespoon)
S’mores Filling
- 6–8 full sheets of graham crackers, crushed
- Regular-sized marshmallows, halved
- Milk chocolate squares (like Hershey’s bars), chopped or whole pieces
Instructions
- Preheat and Prepare Skillet: Preheat your oven to 350°F (175°C). Grease the bottom and sides of a 10-inch cast iron skillet thoroughly with unsalted butter to prevent sticking.
- Form Cookie Dough Base: Divide the chocolate chip cookie dough into two equal parts. Press half of the dough evenly into the bottom of the prepared skillet, forming a flat base layer.
- Add S’mores Layer: Evenly scatter the crushed graham crackers over the cookie dough base. Then layer the milk chocolate squares on top of the graham crackers. Finally, arrange the halved marshmallows over the chocolate layer.
- Top with Remaining Dough: Take the remaining half of the cookie dough and either flatten it into a large disk to cover the filling or break it into smaller chunks to spread over the marshmallows, sealing in the filling.
- Bake the Cookie Skillet: Place the skillet in the preheated oven and bake for 25-35 minutes. Bake until the edges are golden brown and fully cooked, while the center remains soft and gooey.
- Cool Before Serving: Remove the skillet from the oven and allow it to cool for at least 10-15 minutes to set and to avoid burning. Serve warm, scooping out portions to enjoy the melty s’mores-stuffed cookie.
Notes
- Use a 10-inch cast iron skillet for even heat distribution and a rustic presentation.
- For gooier marshmallows, use fresh regular-sized marshmallows and cut them in halves for better melting.
- Allow cooling time for the cookie to set up, making it easier to cut and serve.
- Store leftovers covered at room temperature for up to 2 days or freeze for longer keeping.
- Feel free to substitute milk chocolate squares with semi-sweet or dark chocolate according to preference.
