Instructions
- Heat the oil and sauté onions: Heat 2 tablespoons of extra-virgin olive oil in a medium frying pan over medium heat. Add 1/2 cup of chopped onion and sauté until lightly browned, about 3 minutes. Drain off any excess oil.
- Add cooked bacon: Stir in 2 slices of chopped cooked bacon to the sautéed onions and mix well.
- Add tomatoes and simmer: Add 3 chopped tomatoes and let the mixture simmer, stirring occasionally, until the tomatoes release their juices and soften, about 4 to 5 minutes.
- Prepare eggs in wells: Make 4 small wells in the tomato mixture using a spoon. Crack one egg into each well, evenly spaced.
- Season and cook eggs: Season with freshly ground black pepper to taste. Cover the pan with a glass lid and simmer over medium heat until the egg whites are firm and yolks begin to set, about 2 minutes.
- Add cheese and melt: Remove the lid and sprinkle 1/2 cup shredded Italian blend cheese over the eggs and tomato mixture. Cover again and let the cheese melt, about 1 to 2 minutes.
- Garnish and serve: Sprinkle with 1/4 cup fresh chopped basil. Scoop onto individual plates and serve immediately. For an enhanced meal, serve with rustic sliced toast on the side if desired.
