Salmon
- 4 salmon fillets (or one 500g piece to cut into fillets)

Teriyaki Sauce
- 2 tbsp low-salt soy sauce
- 1 tbsp honey
- 1 tbsp mirin
- 1 garlic clove, crushed

Instructions
- Preheat the oven and prepare salmon: Heat the oven to 180C/160C fan/gas mark 4. If using a whole piece of salmon, cut it into four even fillets. Place a sheet of baking parchment on a baking tray and lay the salmon fillets diagonally on it.
- Cook the green beans: Bring a pot of water to a boil, cook the trimmed green beans for 1 minute, then drain and set aside.
- Arrange green beans and lemon wedges: Place the cooked green beans in small piles around the salmon fillets on the baking tray. Add the lemon wedges to the tray as well.
- Make and apply half of the teriyaki sauce: In a small bowl, mix together the low-salt soy sauce, honey, mirin, and crushed garlic until well combined. Pour half of this sauce evenly over the salmon and green beans.
- Bake the salmon and beans: Place the tray in the preheated oven and bake for 15 minutes.
- Add remaining sauce and continue cooking: Remove the tray carefully, pour the remaining teriyaki sauce over the salmon fillets, and return to the oven. Cook for an additional 5 minutes, or until the salmon is cooked through and flakes easily.
- Finish and serve: Squeeze the lemon wedges over the salmon and serve immediately with noodles or rice of your choice.

- Using low-salt soy sauce helps to control sodium content for a healthier dish.
- Mirin adds a subtle sweetness and depth; if unavailable, a mixture of sugar and rice vinegar can be a substitute.
- Cooking green beans briefly in boiling water retains their crunch and color.
