A simple and flavorful Teriyaki Salmon with green beans, baked to perfection and served with a tangy lemon wedge and your choice of noodles or rice. This dish combines a sweet and savory homemade teriyaki glaze made from low-salt soy sauce, honey, mirin, and garlic, complementing the tender salmon and crisp green beans.

  • 4 salmon fillets (or one 500g piece to cut into fillets)

  • 100g green beans, ends trimmed
  • 1 lemon, cut into wedges

Teriyaki Sauce

  • 2 tbsp low-salt soy sauce
  • 1 tbsp honey
  • 1 tbsp mirin
  • 1 garlic clove, crushed

  • Noodles or rice, to serve

Instructions

  1. Preheat the oven and prepare salmon: Heat the oven to 180C/160C fan/gas mark 4. If using a whole piece of salmon, cut it into four even fillets. Place a sheet of baking parchment on a baking tray and lay the salmon fillets diagonally on it.
  2. Cook the green beans: Bring a pot of water to a boil, cook the trimmed green beans for 1 minute, then drain and set aside.
  3. Arrange green beans and lemon wedges: Place the cooked green beans in small piles around the salmon fillets on the baking tray. Add the lemon wedges to the tray as well.
  4. Make and apply half of the teriyaki sauce: In a small bowl, mix together the low-salt soy sauce, honey, mirin, and crushed garlic until well combined. Pour half of this sauce evenly over the salmon and green beans.
  5. Bake the salmon and beans: Place the tray in the preheated oven and bake for 15 minutes.
  6. Add remaining sauce and continue cooking: Remove the tray carefully, pour the remaining teriyaki sauce over the salmon fillets, and return to the oven. Cook for an additional 5 minutes, or until the salmon is cooked through and flakes easily.
  7. Finish and serve: Squeeze the lemon wedges over the salmon and serve immediately with noodles or rice of your choice.

  • Using low-salt soy sauce helps to control sodium content for a healthier dish.
  • Mirin adds a subtle sweetness and depth; if unavailable, a mixture of sugar and rice vinegar can be a substitute.
  • Cooking green beans briefly in boiling water retains their crunch and color.
  • Adjust cooking time slightly if fillets are thicker or thinner to avoid overcooking or undercooking the salmon.
  • Leftover teriyaki sauce can be used as a drizzle or dip for extra flavor.
