Assembly

Instructions

  1. Cook Sweet Potato: Prick the sweet potato all over with a fork and place it on a microwave-safe plate. Microwave on high power for 5 minutes until soft. Allow to cool slightly to handle safely.
  2. Mash Sweet Potato: Cut the cooked sweet potato in half lengthwise and scoop out the flesh into a large bowl. Mash thoroughly with a fork until smooth and creamy.
  3. Mix Filling: To the mashed sweet potato, add the drained and rinsed black beans, chopped cilantro, and low sodium taco seasoning. Stir everything together until well combined to create the flavorful filling.
  4. Heat Skillet: Place a skillet over medium heat and allow it to preheat for even cooking.
  5. Assemble Quesadilla: Spread an even layer of the sweet potato mixture over one side of a tortilla. Sprinkle approximately ¼ cup of shredded cheese on top, then cover with a second tortilla to form a sandwich.
  6. Cook Quesadilla: Place the assembled quesadilla into the heated skillet. Cook for 3-4 minutes on the first side, until it is lightly browned and the cheese starts melting. Carefully flip it over and cook for an additional 2-3 minutes until the second side is browned and the cheese is fully melted.
  7. Serve and Repeat: Remove the quesadilla from the skillet and cut into quarters. Repeat the assembly and cooking process with the remaining tortillas and filling until all are cooked and ready to serve.
