Scale
Cookies
- 150g plain flour
- 80g butter
- 3 tbsp agave syrup
- 2 egg yolks
- 1 vanilla pod (seeds scraped)
- Pinch of salt
Instructions
- Make the dough: Beat the plain flour, butter, agave syrup, egg yolks, scraped seeds from the vanilla pod, and a pinch of salt together in a stand mixer until you achieve a smooth, cohesive dough.
- Chill the dough: Wrap the dough tightly in cling film and refrigerate for 30 minutes to firm up, making it easier to roll and cut into shapes.
- Roll and cut: Lightly flour your work surface, roll out the chilled dough to an even thickness, then use biscuit cutters to cut out around 36 cookie shapes.
- Prepare for baking: Preheat the oven to 180°C (fan 160°C, gas mark 4). Line two baking sheets with baking parchment and carefully lift the cookies onto the sheets.
- Bake the cookies: Place the baking sheets in the oven and bake the cookies for 8 to 10 minutes, or until golden brown and crisp at the edges.
- Cool and store: Allow the cookies to cool completely on a wire rack. Once cool, store in an airtight container to maintain freshness.
Notes
- Ensure the dough is well chilled before rolling to prevent sticking and help maintain shape.
- Use plain flour; substituting with gluten-free flour may alter texture.
- Adjust baking time slightly if using a convection oven or different oven types.
- The sugar-free nature comes from using agave syrup, a natural sweetener; you can substitute with other sugar-free syrups if desired.
- For extra flavor, consider adding a pinch of cinnamon or nutmeg to the dough.
