  2. Chill the dough: Wrap the dough tightly in cling film and refrigerate for 30 minutes to firm up, making it easier to roll and cut into shapes.
  3. Roll and cut: Lightly flour your work surface, roll out the chilled dough to an even thickness, then use biscuit cutters to cut out around 36 cookie shapes.
  4. Prepare for baking: Preheat the oven to 180°C (fan 160°C, gas mark 4). Line two baking sheets with baking parchment and carefully lift the cookies onto the sheets.
