Description

These Starbucks-inspired cake pops are a delightful treat combining moist yellow cake with creamy vanilla frosting, coated in rich melted chocolate and decorated with colorful sprinkles. Easy to make at home, they capture the fun and flavor of the popular café snack perfect for parties, gifts, or indulgent snacking.

Ingredients

Scale

Cake

  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Frosting & Coating

  • 1 (16 ounce) container vanilla frosting
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/4 cup white chocolate chips
  • Sprinkles (various colors, optional)

Other

  • Lollipop sticks
  • Parchment paper
  • Baking spray with flour (or grease and flour for muffin tin)

Instructions

  1. Preheat and Prepare Pan. Preheat your oven to 350°F (175°C). Grease and flour a 12-cup muffin tin or use baking spray with flour. Line each cup with paper liners to prevent sticking.
  2. Mix Cake Batter. In a large bowl, combine the yellow cake mix, water, vegetable oil, eggs, and vanilla extract. Mix until smooth and well incorporated, ensuring no lumps remain.
  3. Fill Muffin Cups. Evenly distribute the prepared batter into the muffin cups, filling each about two-thirds full to allow room for rising.
  4. Bake Cake. Bake the cake muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean, indicating they are fully cooked.
  5. Cool Cakes. Allow the cupcakes to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely. This ensures they’re firm and ready for the next step.
  6. Melt Chocolates. Melt the semi-sweet chocolate chips in a microwave-safe bowl by heating in 30-second intervals, stirring after each until smooth. Repeat this melting process separately for the milk and white chocolate chips. Keep all melted chocolates warm for dipping.
  7. Crumble Cakes and Mix with Frosting. Once cooled, crumble the cake muffins into fine crumbs in a large bowl. Gently mix in vanilla frosting until the mixture is evenly coated and holds together well. Adjust frosting quantity if needed for consistency.
  8. Form Cake Balls. Using lightly moistened hands, roll the cake mixture into 1-inch balls, making sure they are compact and uniform in size.
  9. Insert Lollipop Sticks. Dip the end of a lollipop stick into melted semi-sweet chocolate, then insert it halfway into each cake ball. This helps secure the stick to the cake pop.
  10. Chill Cake Pops. Place the cake pops upright on a parchment-lined baking sheet and refrigerate them for at least 30 minutes to set and firm up before coating.
  11. Coat in Chocolate. Dip each chilled cake pop into the melted chocolate, turning to coat it evenly. Use a fork to gently tap off any excess chocolate. For a decorative touch, you can layer different chocolate colors to create a marbled effect.
  12. Add Sprinkles. Immediately after coating, sprinkle with colorful sprinkles if desired to add fun and texture.
  13. Set the Coating. Place the coated cake pops back on parchment paper and allow the chocolate to fully set at room temperature for 30 minutes or chill in the refrigerator for 15-20 minutes to speed up firming.
  14. Optional Drizzle. Once the chocolate coating is set, optionally drizzle melted white chocolate over the cake pops for an elegant finishing touch.
  15. Storage. Store the finished cake pops in an airtight container either at room temperature for up to 3 days or refrigerated for up to a week. Allow refrigerated pops to come to room temperature before serving for best taste and texture.

Notes

  • Make sure the cake is completely cooled before crumbling to prevent the frosting mixture from becoming too runny.
  • Lightly moisten your hands with water while rolling the cake balls to prevent sticking.
  • Dipping the stick end in chocolate before inserting helps keep the stick securely in place.
  • You can customize decorations with different sprinkles, edible glitter, or colored chocolate melts.
  • Use good quality chocolate for a smooth coating and better flavor.
  • The cake pops can be frozen for longer storage; thaw in the refrigerator before serving.
