  • 300g cherry vine tomatoes
  • 1 or 2 small garlic bulbs, cut in half to expose the flesh
  • 150ml olive oil
  • Crusty bread, to serve (optional)

Instructions

  1. Preheat the Oven: Set your oven to 150C (130C fan)/gas mark 2 to gently cook the tomatoes and garlic, allowing their flavors to meld slowly.
  2. Prepare the Baking Dish: Place the cherry vine tomatoes and halved garlic bulbs in a snug-fitting baking dish. Season them well with salt and freshly ground black pepper to enhance the taste.
  3. Add Olive Oil and Cover: Pour the olive oil evenly over the tomatoes and garlic. Cover the baking dish tightly with foil to trap moisture and enable slow roasting without drying out.
  4. Bake Slowly: Bake in the preheated oven for 1¼ hours, allowing the tomatoes to soften and the garlic to mellow and sweeten.
  5. Finish and Serve: Remove the foil, gently squash the roasted garlic into the oil, and stir to combine. Serve warm with crusty bread for dipping. This mixture also makes an excellent pasta sauce or pizza topping.

  • For an instant pasta sauce, simply toss the slow-cooked tomatoes and garlic through hot cooked pasta.
