Leek Filling
- 4 leeks, trimmed and finely chopped
- 25g butter
- 3 tbsp water
- 100g full-fat crème fraîche or cream cheese
- Salt and pepper, to taste
Parcels
- 6 sheets filo pastry
- 2 skinless salmon fillets
- Butter, melted, for brushing
Instructions
- Prepare the leeks: Place the finely chopped leeks into a large saucepan with 3 tablespoons of water and a couple of knobs of butter. Cover the pan and cook over medium heat for 10 minutes until the leeks are tender and soft. Remove from heat and allow the mixture to cool before stirring in the crème fraîche or cream cheese. Season with salt and pepper to taste.
- Preheat the oven: Set your oven to 200°C (fan 180°C) or gas mark 6 to properly prepare for baking the parcels until golden and crisp.
- Assemble the parcels: Take one sheet of filo pastry and brush it generously with melted butter. Layer two more sheets on top, brushing each with melted butter. Place one salmon fillet in the center of the stacked pastry, season it, and then spoon half of the leek mixture evenly over the salmon.
- Fold and seal: Fold the ends of the pastry over the filling, pull up the sides, and scrunch the edges together to create a secure parcel. Repeat this process with the remaining pastry sheets, salmon fillet, and leek mixture.
- Brush and bake: Brush the top of each parcel with melted butter to encourage a golden crust. Arrange the parcels on a lightly greased baking sheet and bake in the preheated oven for 20 to 25 minutes, or until the filo pastry is browned, crisp, and puffed up.
- Serve: Remove from the oven and serve the salmon and leek parcels warm, paired with a fresh green salad for a simple and tasty meal.
