Ingredients

  • 4 leeks, trimmed and finely chopped
  • 25g butter
  • 100g full-fat crème fraîche or cream cheese
  • 6 sheets filo pastry
  • 2 skinless salmon fillets

Instructions

  1. Step 1: Heat the oven to 200°C (fan 180°C/gas mark 6). Place the chopped leeks into a large saucepan with 3 tablespoons of water and a couple of knobs of butter. Cover and cook for 10 minutes until the leeks are tender. Remove from the heat, let cool, then mix with the crème fraîche and season to taste.
  2. Step 2: To assemble the parcels, brush one sheet of filo pastry with melted butter. Lay two more sheets on top, brushing butter between each layer. Place one salmon fillet in the center, season it, then spoon over half of the leek mixture.
  3. Step 3: Fold the ends of the pastry over the salmon and leek mixture, then pull up the sides and scrunch them together to enclose the filling completely. Repeat this process for the second parcel.
  4. Step 4: Brush both parcels generously with melted butter. Place them onto a lightly greased baking sheet and bake for 20–25 minutes until the pastry is golden, browned, and crisp.
  5. Step 5: Serve warm with a fresh green salad for a complete meal.

Tips & Variations

  • Keep unused filo sheets covered with a slightly damp tea towel to prevent them from drying out. Wrap any leftover filo tightly in cling film for storage.
  • For extra flavor, add fresh dill or lemon zest to the leek and crème fraîche mixture.
  • You can substitute the salmon fillets with other firm fish like cod or haddock if preferred.

Storage

Store leftover parcels in an airtight container in the refrigerator for up to 2 days. Reheat in a preheated oven at 180°C (fan 160°C/gas 4) for about 10 minutes to maintain the crispiness of the filo. Avoid microwaving as it can make the pastry soggy.

How to Serve
