  • 1 tbsp olive oil
  • 50g unsalted cashew nuts
  • 400g frying beef steak, cut into strips
  • 1 large head broccoli, broken into florets
  • 4 sticks celery, sliced
  • 150ml beef stock (from a cube is fine)
  • 2 tbsp horseradish sauce
  • 2 tbsp low-fat fromage frais

Instructions

  1. Toast the nuts: Heat the olive oil in a frying pan over medium heat. Add the cashew nuts and toss them for a few seconds until they are lightly toasted. Remove the nuts from the pan and set aside.
  2. Cook the beef: Season the beef strips generously with black pepper. Increase the heat to high and stir-fry the strips for 1-2 minutes until they brown. Remove the beef from the pan and set aside along with the toasted nuts.
  3. Stir-fry vegetables: Add the broccoli florets and sliced celery to the same pan. Stir-fry for about 2 minutes to slightly tenderize the vegetables while keeping their crunch.
  4. Simmer with stock: Pour the beef stock over the vegetables, cover the pan with a lid, and let it simmer gently for 2 minutes to infuse flavors and soften the veggies slightly.
  5. Prepare the creamy sauce: While the vegetables are simmering, mix the horseradish sauce and low-fat fromage frais together in a small bowl to create a tangy, creamy accompaniment.
  6. Combine and serve: Return the browned beef strips to the pan and toss them together with the vegetables. Sprinkle the toasted cashew nuts over the top. Serve immediately with the creamy horseradish sauce alongside, ideally paired with mashed potatoes for a complete meal.

Notes

  • To give this dish an Oriental twist, season the steak with Chinese five spice powder, stir-fry in olive oil mixed with sesame oil, and replace the horseradish sauce with soy sauce.
  • For a more vegetable-packed meal, add 2 crushed or sliced garlic cloves and include more vegetables such as sliced carrots, mushrooms, cabbage, or leeks during the stir-fry step.
  • This dish pairs wonderfully with mashed potatoes but also works well with rice or noodles.
