  • Author: Jake
  • Total Time: 15 minutes
  • Yield: 12 antipasto bites 1x

Description

These Quick & Easy Antipasto Bites are perfect for entertaining or as a flavorful appetizer. Combining fresh grape tomatoes, olives, prosciutto, salami, mozzarella, basil, and marinated artichoke hearts, then drizzled with a balsamic glaze and olive oil dressing, they offer a delightful mix of savory and fresh flavors on convenient skewers.

Ingredients

Scale

Antipasto Bites

  • 12 grape tomatoes
  • 12 Kalamata olives
  • 12 green olives
  • 6 slices prosciutto, halved
  • 6 slices salami, folded
  • 12 pieces mozzarella, 1 inch cubes or mozzarella balls
  • 12 leaves fresh basil
  • 6 marinated artichoke hearts, drained and halved

Dressing

  • 1 tablespoon balsamic glaze (or balsamic vinegar)
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the Ingredients: Fold each slice of salami into quarters. Cut the fresh mozzarella into 1 inch cubes if not using mozzarella balls. Halve the marinated artichoke hearts. Ensure the pieces are large enough to be easily skewered.
  2. Assemble the Skewers: Thread one piece of each ingredient onto wooden skewers: a grape tomato, Kalamata olive, green olive, halved prosciutto, folded salami, mozzarella piece, basil leaf, and a halved artichoke heart, arranging to your preference.
  3. Make the Dressing: In a small bowl, whisk together olive oil, balsamic glaze, dried basil, and kosher salt until well combined.
  4. Drizzle and Serve: Lightly drizzle the dressing over the assembled antipasto skewers just before serving to maintain freshness. Enjoy immediately as a flavorful appetizer.

Notes

  • Use wooden or bamboo skewers for easy handling and serving.
  • Feel free to substitute the olives or cured meats based on preference.
  • The balsamic glaze adds sweetness and tang but balsamic vinegar is a good lighter alternative.
  • For a vegetarian version, omit the prosciutto and salami and add more cheese or veggies like roasted peppers.
  • Prepare skewers shortly before serving to keep ingredients fresh and basil vibrant.
