Description

A vibrant and flavorful Pineapple, Beef & Ginger Stir-Fry combining tender rump steak with sweet pineapple chunks, aromatic ginger, and a tangy, spicy soy-based sauce. This quick and easy stir-fry is perfect for a weeknight dinner and can be served with rice and greens for a complete meal.

Beef Marinade

  • 400g rump steaks, thinly sliced
  • 3 tbsp soy sauce
  • 2 tbsp soft brown sugar
  • 1 tbsp chilli sauce
  • 1 tbsp rice wine vinegar

Stir-Fry

  • 2 tsp vegetable oil (divided: 1 tsp + 1 tsp)
  • Thumb-sized piece ginger, cut into fine matchsticks
  • 4 spring onions, cut into 3cm lengths
  • 200g/7oz pineapple, cut into chunks

To Serve

  • Handful coriander leaves
  • Rice and greens (optional)

Instructions

  1. Marinate the Beef: In a mixing bowl, combine thinly sliced rump steaks with soy sauce, soft brown sugar, chilli sauce, and rice wine vinegar. Mix well and set aside to marinate for 10 minutes, allowing the flavors to infuse the beef.
  2. Heat the Wok and Sear the Beef: Heat a wok over high heat and add 1 teaspoon of vegetable oil. Lift the steak slices from the marinade and sear them in batches to ensure a good caramelized crust without overcrowding. Once browned, remove the steak from the wok and set aside.
  3. Cook the Aromatics: Add the remaining 1 teaspoon of vegetable oil to the wok. Fry the ginger matchsticks until golden and fragrant to enhance their aromatic qualities.
  4. Add Vegetables and Pineapple: Add the sliced spring onions and pineapple chunks to the wok. Stir-fry briefly to combine and soften the pineapple slightly, adding a balance of sweetness and texture.
  5. Return Beef and Finish Cooking: Return the seared steak to the wok and stir to heat everything through for about 1 minute. Pour in any remaining marinade and keep stirring until the sauce thickens and coats all the ingredients evenly.
  6. Serve: Transfer the stir-fry to serving plates, sprinkle with fresh coriander leaves, and serve with rice and greens if desired for a complete, satisfying meal.

Notes

  • For a spicier dish, increase the amount of chilli sauce or add fresh sliced chili to the stir-fry.
  • Using a hot wok and cooking in batches prevents the beef from steaming and helps develop a better sear.
  • Pineapple adds sweetness and acidity which balances the savory and spicy flavors; use fresh pineapple for best texture.
