  • 400g Morrisons Cherry Tomatoes, halved or quartered
  • 400g butter beans, drained
  • 3 garlic cloves, crushed
  • 1 lemon, zested and ½ juiced

  • 2 tsp dried oregano
  • 2 tsp paprika
  • Pinch of chilli flakes (optional)

  • 200g feta

Oils & Others

  • 3 tbsp extra virgin olive oil
  • Toasted sourdough, to serve

Instructions

  1. Prep the Oven and Ingredients: Preheat your oven to 200°C (180°C fan)/Gas Mark 6. Prepare the cherry tomatoes by halving or quartering them, and drain the butter beans thoroughly.
  2. Combine Tomatoes and Beans: Place the cherry tomatoes and butter beans into a baking dish. Sprinkle over the dried oregano, paprika, and crushed garlic. Drizzle 2 tablespoons of the olive oil on top, season with salt and pepper to taste, then toss everything together to coat the beans and tomatoes evenly in the garlicky, spiced oil.
  3. Add the Feta and Lemon: Nestle the block of feta in the center of the baking dish. Sprinkle a pinch of chilli flakes over the feta if you like a bit of heat, add the lemon zest, and drizzle a little more olive oil over the top. Squeeze the juice of half the lemon over the beans and tomatoes to add a bright, fresh note.
  4. Bake to Perfection: Place the baking dish in the oven and bake for 25–30 minutes, until the feta becomes tender and starts to turn a golden brown, and the tomatoes have softened and started to release their juices.
  5. Serve: Remove from the oven and serve immediately with toasted sourdough for scooping up the delicious melty feta, beans, and tomatoes.

  • Using a block of good-quality feta ensures creaminess after baking.
  • The optional chilli flakes add a subtle heat; omit if you prefer a milder dish.
  • Toasted sourdough or crusty bread is perfect for scooping up the baked mixture.
