Description
This Mediterranean Tuna, Pepper & Courgette Tart combines flaky puff pastry with a creamy garlic and herb cheese base topped with tender courgettes, tuna flakes, roasted peppers, capers, and black olives. Baked to golden perfection, this savory tart is an easy and flavorful dish perfect for lunch or light dinner.

- 320g pack ready-rolled puff pastry
Vegetables & Cheese
- 1 tbsp olive oil
- 2 courgettes, coarsely grated
- 150g pack garlic & herb soft cheese (Boursin recommended)
- 140g ready-roasted peppers, sliced into strips
Seafood & Garnishes
- 185g can tuna in spring water, drained and broken into flakes
- 1 tbsp capers in brine, drained
- 8 pitted black olives
Instructions
- Prepare and bake the pastry base: Preheat the oven to 220°C (200°C fan)/gas mark 7. Unroll the puff pastry onto a large baking sheet lined with baking parchment. Using a sharp knife, carefully score a 1cm border around the edges of the pastry without cutting all the way through. Prick the inside area of the pastry with a fork to prevent excessive puffing. Bake the pastry for 15 minutes until it starts to turn golden.
- Cook the courgettes: While the pastry is baking, heat the olive oil in a frying pan over medium heat. Add the coarsely grated courgettes and fry until tender and the moisture has evaporated, making the mixture relatively dry. Remove from heat and allow to cool slightly.
- Mix with soft cheese: Once the courgette mixture has cooled a little, gently fold it into the garlic and herb soft cheese until well combined.
- Assemble the tart: Take the partially baked pastry out of the oven. Press down any puffed areas within the scored border using the back of a spoon to create an even surface. Spread the courgette and cheese mixture evenly inside the border.
- Add the toppings: Scatter the tuna flakes evenly over the courgette mixture. Arrange the strips of roasted pepper on top, followed by the drained capers scattered evenly. Finally, dot the tart with the pitted black olives.
- Bake the completed tart: Return the tart to the oven and bake for a further 15 minutes until the pastry is golden, puffed up, and cooked through completely. Remove from the oven and allow to cool slightly before serving.
Notes
- Ensure the courgettes are cooked until quite dry to prevent the pastry from becoming soggy.
- You can use any garlic & herb soft cheese, but Boursin adds a particularly creamy, flavorful touch.
- If preferred, substitute black olives with green olives or omit according to taste.
- This tart is best enjoyed warm but can also be served at room temperature.
- For a gluten-free option, substitute the puff pastry with a gluten-free puff pastry alternative.
