Description

A creamy and delicious Mascarpone Fig Overnight Oats recipe combining rolled oats, vanilla Greek yogurt, ground flaxseed, cinnamon, and rich mascarpone cheese topped with sweet fig jam. Perfect for a wholesome, grab-and-go breakfast that’s both indulgent and nutritious.

Ingredients

Scale

Oats Mixture

  • 1 cup Old Fashioned Rolled Oats
  • 1/2 cup Milk
  • 1 carton (5.3 oz) Vanilla Greek Yogurt
  • 1 Tbsp Ground Flaxseed
  • 1/2 tsp Ground Cinnamon

Mascarpone Topping

  • 4 Tbsp Mascarpone Cheese
  • 2 Tbsp Honey

Finish

  • 2/3 cup Fig Jam, divided

Instructions

  1. Mix the Oats Base: In a large mixing bowl, thoroughly stir together the rolled oats, milk, vanilla Greek yogurt, ground flaxseed, and ground cinnamon until well combined. Divide this oat mixture evenly between two mason jars.
  2. Prepare Mascarpone Layer: In a separate bowl, mix the mascarpone cheese and honey together until smooth and creamy. Spoon this mixture evenly on top of the oat mixture inside each jar.
  3. Add Fig Jam and Refrigerate: Spoon half of the fig jam into the top of each jar, spreading it to cover the mascarpone layer. Seal the mason jars tightly and refrigerate them overnight to allow the oats to soak and flavors to meld.
  4. Serve: In the morning, enjoy the overnight oats directly from the jar for a convenient, on-the-go breakfast option or serve it in a bowl.

Notes

  • Use whole milk or any milk alternative to adjust creaminess as preferred.
  • For a vegan version, substitute mascarpone cheese and Greek yogurt with plant-based alternatives and replace honey with maple syrup.
  • You can customize the sweetness by adjusting the amount of honey and fig jam.
  • Storing overnight oats in mason jars makes for convenient portion control and easy transport.
  • Add nuts or seeds for extra crunch and nutrition if desired.
