A flavorful and healthy Low Carb Mediterranean Burger Salad that combines a juicy beef patty with fresh arugula, tomato, cucumber, kalamata olives, feta cheese, and tangy pickled onions. This recipe is perfect for a satisfying low-carb meal with a Mediterranean twist.

Burger Patty
- 1 beef burger patty, uncooked
- 1/4 tsp sea salt
- 1/4 tsp dried oregano
- 1/2 tsp olive oil
Salad
- 1/4 cup cucumber, finely diced
- 1/4 cup tomato, finely diced
- 5 kalamata olives, sliced into thirds
- 1 tbsp feta cheese, crumbled
- 1–3 tbsp LENASKITCHEN PICKLED ONIONS (or to taste)
- 1/4–1/2 tsp sea salt, more to taste if needed
- 1 tbsp olive oil
- 2 cups fresh arugula
- 1/4 tsp fresh thyme leaves
Instructions
- Prepare the Burger Patty: Season the beef burger patty evenly on both sides with 1/4 tsp sea salt and 1/4 tsp dried oregano. If using ground beef, form a 1/4 cup sized ball and flatten it into a patty before seasoning.
- Cook the Burger: Heat a pan over medium-high heat and add 1/2 tsp olive oil. Once hot, place the seasoned burger patty in the pan, pressing down with a spatula so all sides make contact. Cook for 4-6 minutes on one side until it reaches your desired doneness, then flip and cook for an additional 4-6 minutes. Alternatively, you can grill the patty following the same timing. When cooked, place the patty on a bed of 2 cups fresh arugula.
- Prepare the Greek Salad: Finely dice the cucumber and tomato into small cubes. Slice the kalamata olives into thirds. In a small bowl, combine diced cucumber, tomato, olives, 1 tbsp olive oil, and 1/4 to 1/2 tsp sea salt. Mix well and adjust seasoning to taste.
- Assemble the Burger Salad: Spoon the Greek salad mixture on top of the cooked burger patty and arugula bed.
- Final Garnish: Crumble 1 tbsp feta cheese over the top of the salad and burger. Add 1 to 3 tbsp (or to preference) of LENASKITCHEN PICKLED ONIONS and sprinkle with 1/4 tsp fresh thyme leaves. Serve immediately and enjoy!

- You can use preformed beef patties or form your own from ground beef for a thicker burger.
