- Prepare the Dough: Beat the butter with the icing sugar, a pinch of salt, and the lemon zest until the mixture is smooth and creamy.
- Add Flour and Milk: Sift the plain flour into the butter mixture, then add the milk. Mix everything together until it forms a dough and knead briefly for a smooth texture. Wrap the dough in cling film and chill it in the refrigerator for 1 to 2 hours to firm up.
- Preheat and Prepare for Baking: Heat the oven to 200°C (fan 180°C/gas mark 6). Line two baking sheets with baking parchment to prevent sticking.
- Roll and Cut Dough: Lightly flour a work surface and roll out the chilled dough to a thickness of 2mm. Use cookie cutters to cut various shapes. Arrange the cookies on the baking sheets, grouping similar sizes together to bake evenly.
- Bake the Cookies: Place the baking sheets in the preheated oven and bake the cookies for 10-12 minutes or until they turn golden brown. Remove from the oven and allow the cookies to cool completely on a wire rack.
- Melt the Chocolate: Melt the chosen chocolate in the microwave in short bursts, stirring frequently, or melt it gently in a heatproof bowl over simmering water.
- Decorate the Cookies: Dip one side of each cooled cookie into the melted chocolate. Place them on parchment or a cooling rack to allow the chocolate to set completely before serving or storing.
