  • 1 spring onion, finely sliced

  • 2 whole sprigs thyme
  • ½ Scotch bonnet chili, deseeded and finely chopped (adjust to spice preference)
  • 1 large tomato, chopped
  • 1 pepper, cored and finely chopped
  • 240g can corned beef
  • 2 tbsp ketchup
  • ½ tsp freshly ground black pepper
  • Cooked white rice, to serve
  • Fresh thyme leaves, to garnish

Instructions

  1. Heat the oil: In a frying pan, warm the sunflower oil over medium-low heat until hot enough to sauté the aromatics.
  2. Sauté aromatics: Add the finely chopped onion, spring onion, garlic, thyme sprigs, and Scotch bonnet chili to the pan. Cook for 8 minutes, stirring occasionally, until the onions have softened and the flavors meld.
  3. Add vegetables: Stir in the chopped tomato and pepper. Cook for an additional 4-5 minutes until everything is tender and fragrant.
  4. Cook the corned beef: Increase the heat to medium-high. Add the canned corned beef to the pan and break it up using a wooden spoon. Stir in the ketchup and freshly ground black pepper.
  5. Simmer and combine: Continue cooking for 6 minutes, stirring occasionally, allowing the flavors to combine and the corned beef to brown slightly.
  6. Serve: Remove from heat and serve the bully beef hot over steamed white rice. Garnish with fresh thyme leaves for an authentic Jamaican touch.
