This recipe features classic baked jacket potatoes filled with flavorful homemade baked beans made from haricot beans, fresh vegetables, and aromatic seasonings.   • 4 baking potatoes
  • 1 tbsp sunflower oil

Baked Beans

  • 1 carrot, diced
  • 1 celery stalk, diced
  • 400g can haricot beans, drained
  • 2 tomatoes, chopped
  • 1 tsp paprika (sweet or hot depending on taste)
  • 1 tsp Worcestershire sauce
  • 100ml water

To Serve

  • 2 tbsp chopped chives

Instructions

  1. Preheat and prepare potatoes: Heat your oven to 200°C (180°C fan)/gas mark 6. Scrub the potatoes thoroughly and dry them well. Using a fork, prick the potatoes several times to allow steam to escape during baking.
  2. Bake potatoes: Place the potatoes directly on the oven shelf and bake for 1 to 1 ½ hours until they feel soft when gently squeezed. This ensures a fluffy interior.
  3. Cook vegetables: After the potatoes have been in the oven for 30 minutes, heat the sunflower oil in a pan over medium heat. Add the diced carrot and celery and cook gently for about 10 minutes until softened.
  4. Add beans and tomatoes: Stir in the drained haricot beans, chopped tomatoes, and paprika. Cook gently for 5 minutes until the tomatoes break down and become pulpy.
  5. Simmer sauce: Add 100ml of water and the Worcestershire sauce to the pan. Cook for another 5 minutes to blend the flavors, then cover the pan and keep warm on low heat.
  6. Assemble and serve: Split open the baked potatoes and spoon the warm bean mixture inside. Finish by scattering the chopped chives on top and serve immediately.

Notes

  • You can prepare the baked beans in advance and reheat them for a quick meal.
  • These beans are also delicious served on granary toast for a fast supper.
  • For extra indulgence, stir in some grated cheddar cheese into the beans before serving – a favorite variation called Cowboy beans in the US.
