  1. Prepare the sausage mixture: In a large mixing bowl, combine the ground pork with the sausage seasoning and water. Mix thoroughly to evenly distribute the seasoning and moisture throughout the meat.
  2. Shape the sausage layer: Lightly spray a sheet pan with at least a 1/2 inch lip with cooking spray. Spread the sausage mixture onto the pan in an even layer matching your preferred sausage patty thickness. Smooth out the top for uniform cutting.
  3. Chill the mixture: Place the sheet pan with the sausage mixture in the freezer for about 30 minutes to firm it up slightly, making it easier to cut. Do not freeze solid.
  4. Cut the patties: Remove the partially frozen sausage mixture from the freezer and use a circular cutter such as a cookie cutter, glass, or cup to cut out individual sausage patties. Dip the cutter in water if it becomes sticky to ensure clean cuts.
