Ingredients
Scale
Ingredients
- 2 1/2 lbs. ground pork
- 0.8 ounces (by weight) sausage seasoning (store-bought or homemade)
- 1/4 cup water
Instructions
- Prepare the sausage mixture: In a large mixing bowl, combine the ground pork with the sausage seasoning and water. Mix thoroughly to evenly distribute the seasoning and moisture throughout the meat.
- Shape the sausage layer: Lightly spray a sheet pan with at least a 1/2 inch lip with cooking spray. Spread the sausage mixture onto the pan in an even layer matching your preferred sausage patty thickness. Smooth out the top for uniform cutting.
- Chill the mixture: Place the sheet pan with the sausage mixture in the freezer for about 30 minutes to firm it up slightly, making it easier to cut. Do not freeze solid.
- Cut the patties: Remove the partially frozen sausage mixture from the freezer and use a circular cutter such as a cookie cutter, glass, or cup to cut out individual sausage patties. Dip the cutter in water if it becomes sticky to ensure clean cuts.
- Cook the patties: Cook the patties as desired—pan-fry over medium heat until golden brown and cooked through, or bake in a preheated oven at 375°F (190°C) for approximately 15-20 minutes, flipping halfway through, until fully cooked.
Notes
- You can easily customize the seasoning by making your own blend with spices like sage, black pepper, fennel seed, red pepper flakes, and thyme.
- Do not freeze the sausage block completely before cutting, as it will be difficult to cut and shape the patties.
- Leftover patties can be refrigerated for up to 3 days or frozen for up to 3 months.
- Cook patties to an internal temperature of 160°F (71°C) for food safety.
- You can also shape sausage balls or links instead of patties if preferred.
