Instructions

  1. Combine Ingredients: In a medium bowl, mix together the mayonnaise, low fat buttermilk, sour cream, 3 ounces of crumbled blue cheese, pressed garlic cloves, fresh lemon juice, and ground pepper until well combined.
  2. Blend the Mixture: Using an immersion blender, standard blender, or food processor, blend the mixture until it becomes smooth and creamy.
  3. Add Remaining Blue Cheese: Take the remaining blue cheese crumbles, break them into very small pieces, and gently stir them into the blended dressing to create a chunky texture. If you prefer a fully smooth dressing, you may instead add all 4 ounces of blue cheese before blending in step 2.
  4. Season and Chill: Adjust the seasoning by adding salt to taste. Cover the dressing and refrigerate for at least 10 minutes to allow the flavors to meld and develop.
