Instructions
- Prepare the Apples: Wash your apples thoroughly and slice each apple in half. Using a teaspoon, carefully scoop out the core and remove any unwanted areas from the stem and calyx.
- Slice the Apples: Place each apple half standing upright and slice into 1/4 inch slices, yielding 3 or 4 slices per half depending on apple size. Cut these slices in half vertically to create smaller pieces.
- Apply Nut Butter: Spread a generous layer of nut butter evenly onto one side of each of the 4 bread slices.
- Assemble the Sandwich: On two slices of the nut-buttered bread, layer the apple slices. Sprinkle ground cinnamon over the apples and drizzle a light amount of maple syrup on top. Cover with the remaining bread slices, nut butter side down, to form two sandwiches.
- Heat the Skillet: Grease a griddle or skillet lightly with coconut oil and heat over medium heat. Optionally, brush a light coating of coconut oil onto the top sides of the bread slices.
- Grill the Sandwich: Place the sandwiches on the skillet, oil side down, and cook for 2 to 4 minutes until golden brown and toasted.
- Flip and Cook: Brush the top sides lightly with coconut oil, flip the sandwiches, and cook for another 2 to 4 minutes until the second side is toasted and the apple filling is warmed through.
- Serve: Remove from heat, slice if desired, and serve with any remaining fresh apple slices on the side for added crispness and freshness.
