  • 8 lamb chops
  • 2 courgettes, thickly sliced
  • 1 red onion, halved
  • 1 lemon

Chickpea Hummus Mash

  • 2 x 400g / 2 x 14oz cans chickpeas
  • 50g feta cheese
  • 3 tbsp olive oil
  • handful mint leaves, finely chopped

Instructions

  1. Prepare Grill and Vegetables: Heat your grill to high. Place the lamb chops and thickly sliced courgettes on a baking tray. Toss them with 1 tablespoon of olive oil and season with salt and pepper.
  2. Grill Lamb and Courgettes: Grill the lamb chops and courgettes for 3 to 5 minutes initially. Flip everything over and continue grilling for another 5 minutes or until the lamb is cooked through to your liking.
  3. Marinate Onions: Thinly slice the red onion into half-moon shapes. Place them in a bowl and drizzle with another tablespoon of olive oil, then add a good squeeze of lemon juice. Allow to marinate while the lamb and courgettes grill to soften and absorb flavor.
  4. Prepare Chickpea Hummus Mash: Drain the chickpeas in a sieve and pour boiling water over them to warm through. Transfer chickpeas to a blender or food processor; add the remaining tablespoon of olive oil and half the feta cheese. Blend until smooth, adding a few tablespoons of water as necessary to loosen the consistency. Season with salt and pepper to taste.
  5. Serve: Plate the grilled lamb chops and courgettes alongside the onion marinate and a generous scoop of the hummus mash. Sprinkle with chopped mint leaves and the remaining feta cheese for added flavor and garnish.

  • Make extra hummus mash and leftover grilled lamb and vegetables can be stuffed into pitta breads for a delicious, easy lunch the next day.
  • Adjust lemon juice and seasoning to taste in the marinade and hummus to suit your preference.
