Description

A quick and flavorful Greek salad wrap featuring fresh vine-ripened tomato, crisp cucumber, kalamata olives, creamy feta cheese, and houmous, all wrapped in soft, warm tortillas. This easy-to-make wrap offers a delicious Mediterranean-inspired meal or snack perfect for lunch or light dinners.

  • 1 large vine ripened tomato
  • 50cm piece of cucumber
  • 6 kalamata olives, optional

  • 2 very large soft tortilla wraps
  • 2 heaped tbsp houmous

Instructions

  1. Prepare the Vegetables: Roughly chop the vine ripened tomato into bite-sized pieces. Cut the cucumber into long sticks for easy layering in the wrap. If using, split and stone the kalamata olives.
  2. Warm the Tortillas: Heat the tortillas to enhance flavor and pliability. For those with gas stoves, carefully hold each tortilla over a lit gas ring for approximately 10 seconds on one side, then quickly flip with tongs and heat the other side for about 8 seconds until slightly charred. If you don’t have gas, warm a pan to medium heat and briefly toast each tortilla one at a time without any oil until warm and soft.
  3. Assemble the Wraps: Lay the warmed tortilla flat and arrange a row of chopped tomato, cucumber sticks, crumbled feta cheese, and olives (if using) down the center of each. Then spread houmous evenly around the top and sides of the tortilla to add creaminess and seal the wrap.
  4. Roll and Serve: Fold in the sides of the tortilla to enclose the filling, then roll tightly into a large cigar shape. Cut each wrap in half to serve and enjoy immediately as a handheld meal.

Notes

  • Use fresh, ripe tomatoes and crisp cucumber for the best texture and flavor.
  • Heating the tortillas over direct flame adds a wonderful smoky flavor but requires caution to avoid burning.
  • Kalamata olives are optional but add an authentic Greek flavor.
  • Wraps are best served fresh but can be prepared ahead and chilled briefly.
  • For a spicier kick, add a sprinkle of chili flakes or a dash of hot sauce inside the wrap.
