  • Author: Jake
  • Total Time: 1 hour 20 minutes (including chilling time)
  • Yield: Approximately 20 clusters 1x

Description

Deliciously indulgent Rocky Road Clusters combine rich dark chocolate, buttery golden syrup, crunchy digestive biscuits, mini marshmallows, pecans, and sultanas. These no-bake chocolate treats are coated in a luscious melted chocolate mix and chilled to perfection, making a perfect easy-to-make dessert or snack for chocolate lovers.

Ingredients

Scale

Chocolate Mixture

  • 100g salted butter, chopped
  • 200g dark chocolate, chopped
  • 2 tbsp golden syrup

Mix-Ins

  • 150g digestive biscuits, broken into pieces
  • 100g mini marshmallows
  • 50g pecans, roughly chopped
  • 50g sultanas

Decoration (Optional)

  • Edible gold lustre, for dusting

Instructions

  1. Melt the Chocolate Mixture: Place the chopped butter, dark chocolate, and golden syrup in a heatproof bowl. Set the bowl over a pan of just simmering water, ensuring the bowl does not touch the water. Stir occasionally until all the ingredients melt together into a smooth, glossy mixture.
  2. Combine Dry Ingredients: In a separate large bowl, break the digestive biscuits into bite-sized pieces. Add the mini marshmallows, roughly chopped pecans, and sultanas. Mix these together to evenly distribute.
  3. Mix Coating: Pour the melted chocolate mixture over the biscuit and fruit mix. Gently stir until every piece is well-coated with the chocolate, ensuring even coverage without breaking up the biscuits.
  4. Form Clusters: Using a spoon, drop spoonfuls of the combined mixture onto a baking tray lined with baking parchment. Try to make small individual clusters for easy serving.
  5. Add Decoration and Chill: Optional: Lightly dust the clusters with edible gold lustre for an elegant finishing touch. Place the tray in the refrigerator and chill for 1 hour to allow the clusters to set firmly before packaging or serving.

Notes

  • Keep the clusters refrigerated and consume within three days for optimal freshness.
  • You can substitute pecans with other nuts such as walnuts or almonds depending on your preference.
  • If you don’t have golden syrup, honey or corn syrup can be used as alternatives.
  • Ensure the bowl used for melting chocolate is heatproof and that no water gets into the chocolate mixture as this can cause it to seize.
  • These Rocky Road Clusters are perfect for gift-giving when packaged in decorative boxes or bags.
