Ingredients

Scale

White Sauce

  • 1 tablespoon Butter
  • 1 tablespoon Oil
  • 2 cloves Garlic
  • 1/2 cup Plain Greek Yogurt

Vegetables & Toppings

  • 4 Mushrooms
  • 1/4 Red Onion
  • 5 Cherry Tomatoes
  • 2 cups Arugula
  • 1/2 cup Shredded Mozzarella Cheese
  • 2 ounces Goat Cheese

Pizza & Seasoning

  • 1 Fresh Pizza Dough
  • 1 tablespoon Olive Oil
  • Salt, to taste
  • 1 tablespoon Oil (for sautéing)

Instructions

  1. Prepare White Sauce: In a small saucepan, heat 1 tablespoon butter and 1 tablespoon oil over medium heat. Add 2 cloves of garlic and cook until garlic turns light brown, then remove from heat. Stir in 1/2 cup plain Greek yogurt until smooth. Set this creamy white sauce aside.
  2. Sauté Vegetables: Heat 1 tablespoon oil in a sauté pan over medium heat. Place 4 mushrooms in a single layer and sprinkle with salt to taste. Cook for 7 minutes, adding 1/4 sliced red onion during the last 2 minutes of cooking. Drain any excess liquid from the vegetables once cooked.
  3. Prepare Pizza Base: Brush 1 tablespoon olive oil evenly over the fresh pizza dough. Spread the prepared white sauce over the dough as the base layer.
  4. Add Toppings: Evenly distribute the sautéed mushrooms and onions on top of the sauce, followed by 5 cherry tomatoes. Sprinkle 1/2 cup shredded mozzarella cheese and crumble 2 ounces of goat cheese over the toppings.
  5. Bake Pizza: Place the pizza on the lower rack of a preheated oven at 475°F (250°C). Bake for 10-12 minutes until the crust is golden and cheese is melted and bubbly.
  6. Broil for Finish: Move the pizza to a higher rack and broil for an additional 2 minutes to achieve a nicely browned and slightly crisp cheese topping. Watch carefully to prevent burning.
  7. Add Fresh Arugula: Remove the pizza from the oven and immediately top with 2 cups of fresh arugula to add a fresh, peppery flavor. Slice and serve hot.

Notes

  • Ensure garlic is cooked gently to avoid bitterness in the white sauce.
  • Drain sautéed vegetables well to prevent soggy pizza crust.
  • Use fresh pizza dough for a better crust texture and flavor.
  • Broiling time is short; watch closely to avoid burning cheese.
  • Adding arugula after baking preserves its fresh and crisp texture.
