Description

A delicious and savory garlic mushroom flatbread pizza featuring roasted shallots, mushrooms, and garlic, topped with creamy béchamel sauce, mozzarella, and fragrant sage leaves. Perfectly golden and melted, served with a refreshing green salad.

Vegetables and Herbs

  • 2 shallots, halved and finely sliced
  • 300g mushrooms, quartered
  • 3 garlic cloves, sliced
  • Small handful of parsley, finely chopped
  • 6 sage leaves

Flatbread and Cheese

  • 2 flatbreads
  • 4 tbsp béchamel sauce
  • 75g mozzarella, grated

Oil and Seasoning

  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Roast the Vegetables: Preheat the oven to 220C/200C fan/gas 7. In a large baking tray, toss the finely sliced shallots, quartered mushrooms, and sliced garlic with olive oil and a pinch of salt and pepper. Spread out the mixture evenly on the tray and roast for 12-15 minutes, until the vegetables are golden all over.
  2. Mix with Parsley: Remove the roasted vegetables from the oven and transfer them along with any collected juices into a bowl. Stir in the finely chopped parsley to combine fresh herb flavor with the roasted veggies.
  3. Prepare the Flatbread Base: Arrange the two flatbreads on the baking tray. Spread an even layer of béchamel sauce over each flatbread as a creamy base for the toppings.
  4. Add Toppings and Bake: Scatter the grated mozzarella evenly over the béchamel sauce, then distribute the roasted mushroom mixture on top. Tuck sage leaves scattered over each flatbread. Return to the oven and bake for 6-8 minutes until the cheese is melted and golden.
  5. Serve: Remove the flatbread pizzas from the oven, cut into wedges, and serve warm with a fresh green salad on the side.
