Noodles and Vegetables

  • 250g medium egg noodles
  • 1 tbsp sesame oil, plus extra to serve (optional)
  • 1 tbsp groundnut oil, divided
  • Bunch of spring onions, thinly sliced lengthways
  • 300g bag beansprouts

Prawns and Seasoning

  • 4 garlic cloves, finely chopped
  • 1 red chilli, finely chopped
  • 400g raw peeled tiger prawns
  • 1 tbsp soft brown sugar
  • 1 tbsp dark soy sauce

Instructions

  1. Cook the noodles: Prepare the egg noodles according to the package instructions. Once cooked, rinse them with cold water to stop the cooking process and drain thoroughly. Toss the noodles with 1 teaspoon of sesame oil to prevent sticking and enhance flavor.
  2. Stir-fry vegetables and warm noodles: Heat 2 teaspoons of groundnut oil in a non-stick wok over medium-high heat. Add most of the sliced spring onions (reserve some for garnish) and all the beansprouts. Stir-fry for a couple of minutes until the vegetables are tender but still crisp. Add the prepared noodles to the wok and toss everything together to warm through. Stir in the remaining sesame oil, then transfer the noodle mixture to a serving dish and set aside.
  3. Cook prawns with garlic and chilli: Carefully wipe out the wok to clean out any residue. Add the remaining groundnut oil and heat briefly over medium-high heat. Add the finely chopped garlic and red chilli, cooking for about 10 seconds until fragrant. Add the raw tiger prawns and stir-fry for about 2 minutes until they just turn pink and are nearly cooked through.
  4. Finish the prawn sauce: Stir in the soft brown sugar and dark soy sauce, allowing the mixture to bubble and the sugar to dissolve completely. Continue cooking until the prawns are fully cooked and the sauce has slightly thickened.
  5. Assemble and serve: Spoon the garlic chilli prawns and sauce on top of the warm sesame noodles. Sprinkle the reserved spring onions over the dish for a fresh, crisp finish. Drizzle extra sesame oil on top if desired. Serve immediately for the best flavor and texture.

Notes

  • Use medium egg noodles for the best texture; other noodle types can be substituted but may alter the dish’s character.
  • If you prefer less heat, reduce or omit the red chilli.
  • The dish can be adapted to be gluten free by using tamari or gluten-free soy sauce instead of regular dark soy sauce.
