Description

These Everything Fathead Bagels are a low-carb, gluten-free alternative to traditional bagels, made with mozzarella, cream cheese, and almond flour. Perfectly seasoned with everything bagel seasoning, they provide a chewy, satisfying texture and rich flavor without the carbs.

  • 1 tablespoon Everything Bagel Seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) to prepare for baking the bagels.
  2. Melt Cheeses: In a microwave-safe bowl, heat the shredded mozzarella and cream cheese for 1 minute, then stir and microwave for another 30 seconds until fully melted and combined.
  3. Combine Dough: Add almond flour, egg, and a pinch of salt to the melted cheese mixture. Mix gently until completely combined into a dough.
  4. Chill Dough: If the dough feels sticky, sprinkle with extra almond flour. Wrap the dough in plastic wrap and refrigerate for 10 minutes or freeze for 5 minutes to firm it up.
  5. Shape Bagels: Divide the dough into 6 equal balls, roll each ball into a log shape.
  6. Prepare Pan & Add Seasoning: Spray a donut pan with nonstick cooking spray, then wrap each dough log around the indentations in the pan. Sprinkle the dough with everything bagel seasoning.
  7. Bake: Bake the bagels in the preheated oven for 15 minutes, or until golden brown on top.
  8. Store: Once cooled, store the bagels in an airtight container in the refrigerator for up to one week.

Notes

  • If the dough is too sticky to handle, you can add a small amount of extra almond flour gradually until it is easier to work with.
  • Using a donut pan helps achieve the classic bagel shape but if unavailable, shaping by hand on a baking sheet is possible.
  • For a crispier crust, broil the bagels for 1-2 minutes at the end of baking, watching carefully to avoid burning.
