Instructions

  1. Preheat the oven: Set your oven to broil on high to get it ready for cooking the meatballs quickly at a high temperature.
  2. Mix the ingredients: In a large mixing bowl, combine the ground chicken with kosher salt, cumin, oregano, red pepper flakes, chopped dill, parsley, mint, diced red onion, grated garlic, and lemon zest. Use your hands to mix thoroughly until all ingredients are evenly distributed.
  3. Form the meatballs: Use a 1 ½ inch cookie scoop or a tablespoon to portion out the chicken mixture onto a cookie sheet, aiming for about 30 meatballs. Wet your hands slightly, then roll each portion between your palms to create evenly sized, smooth meatballs. Place them back on the cookie sheet spaced evenly.
  4. Broil the meatballs: Place the sheet pan under the broiler and cook for 8-10 minutes. Check the internal temperature after 8 minutes to ensure it reaches 165°F (74°C) for safe consumption. The broiler will create a nice crispy exterior while keeping the meatballs juicy inside.
