Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the stuffed turkey breast.
  2. Prepare Turkey Breast: Butterfly the turkey breast by cutting it in half horizontally without cutting all the way through. Place the turkey between two pieces of plastic wrap and gently pound it out until it is about ¼-inch thick. Remove the top plastic wrap but leave the bottom on to help with rolling later.
  3. Sauté Vegetables: Heat a pan over medium-high heat and melt the unsalted butter. Add the finely chopped shallots, chopped baby bella mushrooms, and 1 ½ teaspoons kosher salt. Cook for 5 minutes, stirring frequently to soften the vegetables.
  4. Add Garlic and Herbs: Mix in the minced garlic and the fresh herbs (thyme, sage, rosemary). Cook for another minute until fragrant, adjust the seasoning if necessary, then transfer the mixture to a plate and allow it to cool slightly.
  5. Make Filling: In a bowl, combine the cooled mushroom and shallot mixture with softened cream cheese. Stir well until thoroughly mixed to create the creamy filling.
  6. Spread Filling: Evenly spread the cream cheese and mushroom filling over the pounded-out turkey breast, leaving about a ½-inch border around the edges uncovered to allow for rolling.
  7. Roll the Turkey: Using the plastic wrap underneath the turkey, carefully but firmly roll the turkey breast from one long side to the other, creating a neat roll. Tie the roll securely with baker’s twine to hold its shape and place it onto a baking dish fitted with a cooling rack.
  8. Prepare the Seasoning Rub: In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, finely chopped herbs (thyme, sage, rosemary), and 1 teaspoon kosher salt. Rub this seasoning mixture all over the outside of the rolled turkey.
  9. Bake: Place the baking dish with the stuffed turkey roll into the preheated oven. Bake for 17–20 minutes, adjusting the time if your turkey breast is smaller or larger than 3 pounds, until the internal temperature reaches around 160°F (71°C).
  10. Broil for Color: Switch the oven to the broil setting and cook the turkey for an additional 2 minutes, or until the outside is nicely browned.
  11. Rest the Turkey: Remove the turkey from the oven, tent it loosely with foil, and let it rest for 10 minutes to allow the juices to redistribute.
