These refreshing cucumber and herb triple-decker sandwiches are perfect for a light lunch or an elegant afternoon tea treat. Featuring soft cheese blended with fresh mint and chives, thinly sliced cucumber layered between wholemeal bread, these mini sandwiches are vibrant, flavorful, and easy to assemble.

For the Sandwiches
- 1 small cucumber, thinly sliced
- 200g tub soft cheese
- ½ small bunch mint, finely chopped
- Small bunch chives, snipped
- 9 thin slices wholemeal bread
Instructions
- Prepare the cucumber: Lay the thinly sliced cucumber slices on kitchen paper to dry, removing excess moisture which helps prevent sogginess in the sandwiches.
- Make the cheese herb spread: In a small food processor or using a hand blender, whizz the soft cheese together with finely chopped mint and some seasoning (salt and pepper) until smooth and well combined. Stir in most of the snipped chives to incorporate evenly.
- Assemble the first layer: Spread the cheese and herb mixture evenly over 6 slices of the thin wholemeal bread. Arrange the majority of the cucumber slices over the spread, reserving 12 slices for garnish.
- Build the triple-deckers: Layer two slices of cucumber-topped bread, then place a plain slice of bread on top to create a triple-layer sandwich. Repeat this assembly to create three triple-deckers in total.
- Trim and cut: Using a sharp knife, carefully trim off the crusts of each sandwich for a neat presentation. Cut each triple-decker into 4 smaller square mini-sandwiches.
- Garnish and serve: Top each mini sandwich with an additional reserved cucumber slice. Sprinkle the remaining chives over the top for a fresh herb finish and serve immediately.
Notes
- To prevent the bread from becoming soggy, drying the cucumber slices on kitchen paper is essential.
- Feel free to substitute soft cheese with cream cheese or a herbed goat cheese for variation.
- Use a serrated knife for easier crust trimming and cutting without squashing the sandwiches.
- These sandwiches are best served fresh but can be refrigerated for up to 2 hours before serving.
- For a gluten-free version, substitute the wholemeal bread with gluten-free bread slices.
