Enjoy these crispy halloumi tacos with a zesty and spicy slaw, perfect for a quick and flavorful meal. The halloumi is coated in flour and Cajun seasoning, then pan-fried to golden perfection, paired beautifully with sautéed courgette and a refreshing, tangy slaw wrapped inside warm tortillas.

Halloumi
- 200g halloumi, cut into 1cm cubes
- 1 tbsp plain flour
- 2 tsp Cajun-style seasoning
- Salt and pepper, to taste
- 2 tbsp olive oil
Vegetables
- 1 Morrisons courgette, halved then sliced into half-moons
- ¼ white cabbage, shredded
- 1 carrot, grated
- 1 green chilli, thinly sliced
- Handful of coriander, chopped
Other
- 8 mini plain tortilla wraps
- 4 tbsp mayonnaise
- 1 lime, cut into wedges
Instructions
- Coat the halloumi: Place the halloumi cubes into a bowl, add the plain flour, Cajun-style seasoning, salt, and pepper. Toss everything well until the cubes are evenly coated.
- Fry the halloumi: Heat the olive oil in a frying pan over medium-high heat. Add the coated halloumi cubes and fry for 4-6 minutes, turning frequently, until the cubes are crispy and golden on all sides. Remove from the pan and set aside on a plate.
- Cook the courgette: In the same pan, add the sliced courgette, season with salt and pepper, and fry for 6-8 minutes until golden and softened.
- Prepare the slaw: In a bowl, mix together the shredded cabbage, grated carrot, green chilli, mayonnaise, chopped coriander, and a pinch of salt and pepper to taste.
- Warm the tortillas: Heat the tortillas in a dry frying pan for 30 seconds on each side or microwave them for 1 minute until warm and pliable.
- Assemble the tacos: Place the fried halloumi and sautéed courgette inside each warmed tortilla. Top generously with the spicy slaw and serve with lime wedges on the side for squeezing over the tacos.
Notes
- For extra heat, add more green chilli or a dash of hot sauce to the slaw.
- You can substitute halloumi with firm tofu for a vegetarian twist, but the texture will vary.
- The tacos are best enjoyed fresh while the halloumi is still crispy.
- To make gluten-free, use gluten-free tortillas and ensure the flour used for coating is gluten-free.
