A delicious recipe for crispy chicken and smashed avocado baps, featuring tender chicken breasts coated in a crunchy almond and sesame seed crust, paired with creamy lime-infused smashed avocado and crisp lettuce, all served in soft baps for a satisfying and fresh sandwich.

Chicken
- 2 large skinless chicken breasts
- 100g plain flour
- 1 egg, beaten
- splash of milk
- 3 tbsp ground almonds
- 1 tbsp sesame seeds
- 3 tbsp vegetable or rapeseed oil
Avocado topping
- 2 small avocados, stoned, peeled and halved
- ½ lime, juiced
Sandwich assembly
- 4 baps or rolls, split
- 1 Little Gem lettuce, leaves separated
Instructions
- Prepare and flatten the chicken: Place the chicken breasts on a board and cover with baking parchment. Use a rolling pin to bash them to an even thickness, then cut each breast diagonally in half.
- Coat the chicken: Season the plain flour and place it on a plate. In a shallow bowl, whisk together the beaten egg and a splash of milk. Dust the chicken pieces in the flour, shaking off any excess, then dip into the egg mixture. Mix the ground almonds and sesame seeds with any remaining flour on the plate and coat the chicken pieces thoroughly with this mixture.
- Fry the chicken: Heat half of the oil in a large frying pan over medium heat. Fry the chicken pieces for 4-5 minutes on one side until crisp and golden. Flip the pieces, add the remaining oil, and cook for another 4-5 minutes. Cut into the thickest part of one piece to check it is cooked through. Allow the chicken to rest and cool for 5 minutes.
- Prepare the smashed avocado: Scoop the avocado flesh into a bowl. Add lime juice and a pinch of salt, then mash until smooth but still slightly chunky.
- Assemble the baps: Spread the smashed avocado evenly over the split baps. Top with Little Gem lettuce leaves, then place the crispy chicken pieces on top. Cut each bap in half before serving.
