Seafood Stew
- 1 tbsp olive oil
- 1 onion, chopped
- 2 celery sticks, chopped
- 1 garlic clove, crushed
- 175ml white wine
- 300ml chicken stock
- 1 tbsp cornflour, mixed to a paste with 1 tbsp cold water
- 400g bag frozen seafood mix, defrosted
- small bunch dill, chopped
- 5 tbsp half-fat crème fraîche

Instructions
- Prepare the base: Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and celery and cook gently for about 10 minutes until they are soft but not browned.
- Add garlic and wine: Add the crushed garlic to the pan and cook for 1 more minute to release its aroma. Then pour in the white wine and turn the heat to high to simmer until most of the wine has evaporated.
- Add stock and thicken: Pour in the chicken stock along with the cornflour paste mixture. Reduce the heat to medium and simmer for 5 to 10 minutes, stirring frequently until the sauce thickens.
- Cook seafood and season: Season the stew with salt and pepper, then add the defrosted seafood and most of the chopped dill. Simmer gently for a few minutes until the seafood is piping hot and cooked through.
- Finish with crème fraîche: Stir in the half-fat crème fraîche to add creaminess and richness to the stew.
- Prepare garlic bread: Meanwhile, cook the garlic bread according to the package instructions to serve alongside the stew.
- Serve: Divide the seafood stew into warm bowls, scatter the remaining dill on top, and serve immediately with the garlic bread for dipping.
