  • 2 courgettes, thinly sliced
  • Small handful basil, chopped
  • 1 garlic clove, crushed

  • 250g tub ricotta
  • 2 large eggs
  • 1 tbsp grated parmesan (or vegetarian alternative)

Pantry & Others

  • 2 tbsp olive oil
  • 320g pack ready-rolled puff pastry
  • Flour, for dusting

Instructions

  1. Prepare Courgettes: Heat oven to 200C/180C fan/gas 6. Heat half the olive oil in a frying pan over medium heat. Add the thinly sliced courgettes and cook for 5 minutes until golden around the edges. Remove from the pan and set aside to cool slightly.
  2. Mix Ricotta Filling: In a mixing bowl, combine the ricotta, eggs, most of the chopped basil (reserve some for garnish), a pinch of nutmeg, grated Parmesan, and crushed garlic. Stir well to create a creamy, flavorful mixture. Set aside.
  3. Prepare Pastry Base: Lightly dust a clean surface with flour and unroll the puff pastry. Roll it out gently to create an even surface. Line a baking tray with baking parchment and place the pastry on top.
  4. Assemble the Tart: Spread the ricotta mixture over the pastry, leaving a 1cm border around the edges. Arrange the cooked courgette slices evenly over the ricotta layer. Carefully fold the edges of the pastry over the filling and press firmly to seal, ensuring none of the filling seeps out during baking.
  5. Bake the Tart: Place the tart in the preheated oven and bake for 30 minutes until the pastry is puffed and a golden brown color.
  6. Serve: Remove from oven and allow to cool slightly. Serve warm, garnished with the remaining fresh basil for a burst of fresh flavor.
