  • 60g white chocolate, broken up

Instructions

  1. Prepare the Cookie Dough: Using a stand mixer, beat the unsalted butter and light brown sugar together until well combined and creamy. Add the vanilla extract and plain flour, then beat again until the mixture forms a smooth dough. Fold in the finely chopped dark or milk chocolate pieces evenly.
  2. Shape and Chill the Dough Balls: Roll spoonfuls of the cookie dough into approximately 15g balls using your hands. Arrange the balls on a tray or plate, then chill them in the refrigerator for at least 1 hour to firm up. This should make about 30 truffle balls.
  3. Melt the Dark or Milk Chocolate: Place the remaining broken dark or milk chocolate in a heatproof bowl. Melt it in short bursts in the microwave, stirring in between, until smooth and fully melted.
  4. Coat the Truffles: Using a fork, carefully lower each cookie dough ball into the melted chocolate, making sure it is thoroughly coated. Transfer the coated truffles onto a baking parchment-lined tray. Place the tray in the refrigerator and chill for 1 hour to set the chocolate coating.
  5. Melt the White Chocolate: Melt the white chocolate in a heatproof bowl using the same microwave method until smooth and fully melted.
  6. Decorate the Truffles: Drizzle the melted white chocolate over the chilled truffles in an attractive pattern. Sprinkle lightly with sea salt for a subtle savory contrast. Return the truffles to the fridge and chill for an additional 30 minutes or until ready to serve or package.
  7. Storage: Keep the truffles refrigerated. They will stay fresh for up to one week.
