Description

Delightfully festive chocolate snowmen biscuits with layers of cocoa-flavored cookies stacked and decorated with cranberry eyes and mango carrot noses, perfect for holiday celebrations and gifting.

Dry Ingredients

  • 250g plain flour, plus extra for dusting
  • 50g cocoa powder
  • Pinch of salt

Wet Ingredients

  • 150g butter, softened
  • 130g caster sugar
  • 75g light brown soft sugar
  • 1 egg
  • ½ tsp vanilla extract

Icing & Decoration

  • About 200g icing sugar
  • About 3 tbsp milk
  • About 5 cranberries
  • 23 slices of dried mango
  • 6cm, 5cm and 3½ cm round cutters

Instructions

  1. Prepare the Dough: In a bowl, mix the plain flour, cocoa powder, and a pinch of salt. In another bowl, beat the softened butter with the caster sugar and light brown soft sugar for about 3 minutes until the mixture is pale and creamy. Stir in the egg and vanilla extract. Gradually add the dry ingredients into the wet mixture, combining with your hands to form a dough. Wrap the dough in cling film and chill it in the fridge for 1 hour.
  2. Preheat and Roll Out: Preheat the oven to 170°C (150°C fan) or gas mark 3. Lightly flour your work surface and roll out the chilled dough to a thickness of about 4mm. Using the 6cm, 5cm, and 3½ cm round cutters, press out circles in three sizes.
  3. Bake the Biscuits: Arrange the cut dough circles sorted by size on baking sheets lined with baking parchment. Bake the smallest cookies for 6-8 minutes and the medium and largest sizes for about 10-12 minutes. Once baked, transfer the biscuits to a wire rack to cool completely.
  4. Prepare the Icing: In a small bowl, gradually add about 3 tablespoons of milk to approximately 200g of icing sugar, stirring continuously until the mixture is smooth, thick, and spreadable.
  5. Assemble the Snowmen: Coat the tops of the cooled biscuits with the prepared icing using a small knife. Stack three biscuits of each size, starting with the largest at the bottom, to form snowmen shapes.
  6. Decorate: Cut the cranberries into small pieces and use them as eyes, mouths, and buttons by sticking them onto the iced biscuits. Slice the dried mango into carrot-shaped mini pieces and place them on the snowmen faces as noses.
  7. Dry and Store: Allow the assembled and decorated snowmen biscuits to dry completely. Store in an airtight container for up to three days.

  • Ensure the dough is well chilled before rolling to prevent sticking and make cutting easier.
  • Adjust the icing consistency with milk gradually to avoid thinning it too much.
  • Handle the cranberry and dried mango decorations carefully to keep their shapes intact.
