- 1 pound pizza dough (store bought or homemade)
Cheese Filling
- 1 cup feta cheese
- 1 cup ricotta cheese
- 2 ½ cups shredded mozzarella cheese
- 2 tablespoons onion salt (Trader Joe’s) or dried dill
Toppings and Seasonings
- 2–4 eggs + 1 egg for egg wash
- 2–4 tablespoons unsalted butter
- 2 teaspoons Everything But The Bagel Seasoning (optional)
- ½ teaspoon red pepper flakes or Trader Joe’s Chili Onion Crunch (optional for spice)
- 2 tablespoons green onion, finely chopped
Instructions
- Prepare the dough: Place cold pizza dough in a bowl lightly coated with oil. Swirl the dough to coat it completely, cover with a tea towel, and let it rest for at least one hour. Once rested, punch down the dough to release any air bubbles.
- Preheat the oven: Preheat your oven to 350ºF if using a convection oven, or to 375ºF for a still oven. Adjust baking times accordingly and prepare a baking sheet lined with parchment paper.
- Make the cheese filling: In a mixing bowl, combine shredded mozzarella, feta cheese, ricotta cheese, and onion salt or dried dill. Mix until well combined.
- Shape the dough: Divide the dough into halves, then further into 2 to 4 balls depending on your preferred serving size. Roll one piece of dough into an oval shape about 9-10 inches long and 1/8 inch thick.
- Fill the dough: Place the rolled dough on the prepared baking sheet. Spoon the cheese mixture into the center, leaving a ½-inch border around the edges.
- Form the boat shape: Fold the left side of the dough over the cheese by rolling it 2 to 3 times toward the center so it overlaps with the cheese mixture. Repeat on the opposite side to create a boat shape.
- Seal the ends: Pinch and twist the narrow ends of the dough twice to seal and secure the filling inside the dough.
- Apply egg wash and season: Brush the edges of the dough generously with the egg wash. While still wet, sprinkle the edges with Everything But The Bagel Seasoning if using.
- Initial baking: Bake the Khachapuri for 20 minutes until the dough is golden and the cheese is beginning to set.
- Add the egg and butter: Remove from the oven and create a well in the center of the cheese filling. Crack one egg into the well. Scatter pieces of unsalted butter (about 1 tablespoon in total) over the cheese.
- Finish baking: Return the Khachapuri to the oven and bake for an additional 5 minutes, or until the egg white is cooked but the yolk remains slightly runny.
- Serve and garnish: Remove from oven and garnish with finely chopped green onions and optional red pepper flakes or chili crunch for added spice. Serve immediately while warm and gooey.
