- 2 tablespoons Olive Oil
- 4 tablespoons Basil Pesto
- 1 Fresh Mozzarella Cheese Ball (about 4 oz)
- 1 Tomato, sliced

Instructions
- Preheat the skillet: Heat a skillet or grill pan over medium heat to prepare for grilling the sandwich evenly.
- Prepare the bread slices: Brush the outside of each bread slice with enough olive oil to lightly coat, ensuring a crispy, golden exterior.
- Spread pesto: On the other side (inside) of each bread slice, spread a generous layer of basil pesto to add rich flavor.
- Assemble the sandwich: On one bread slice with pesto side up, place the fresh mozzarella ball sliced or torn into pieces, then layer tomato slices on top. Season with salt and ground black pepper to taste.
- Close and grill: Place the second bread slice on top with the pesto side facing down. Put the sandwich in the hot pan and grill for about 2-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Serve warm: Remove from the pan, slice in half, and serve immediately to enjoy the melty, fresh flavors.
