Instructions

  1. Cook the Bacon and Scramble the Eggs: Start by cooking the 4 bacon rashers in a skillet until they are crispy. In a separate bowl, beat the 4 large eggs with a splash of milk, cream cheese, or cottage cheese if desired for creaminess. Scramble the eggs gently in a skillet with a little salted butter until soft and fluffy.
  2. Prepare the Bacon: Once the bacon is cooked and crispy, drain it on paper towels to remove excess fat. Then roughly chop the bacon into bite-sized pieces.
  3. Toast and Butter Bagels: Toast the 4 mini bagels until golden and warm. Spread each toasted bagel generously with salted butter while still hot.
  4. Assemble the Bagel Bites: Layer the scrambled eggs evenly on top of each buttered mini bagel. Then add the 4 ounces of shredded cheddar cheese over the eggs, followed by the chopped bacon pieces.
  5. Broil to Finish: Place the assembled bagel bites under the broiler for about 1-2 minutes, just long enough to melt the cheddar cheese and rewarm the eggs. Watch carefully to avoid burning. Once cheese is melted and bubbling, remove and serve immediately.
