Ingredients
Scale
Eggs & Dairy
- 4 Large Eggs
- 4 ounces Cheddar Cheese
- Salted Butter, as needed
- Optional: milk, cream cheese, or cottage cheese (small amount to scramble eggs)
Bakery
- 4 Mini Bagels
Meat
- 4 Rashers Bacon
Instructions
- Cook the Bacon and Scramble the Eggs: Start by cooking the 4 bacon rashers in a skillet until they are crispy. In a separate bowl, beat the 4 large eggs with a splash of milk, cream cheese, or cottage cheese if desired for creaminess. Scramble the eggs gently in a skillet with a little salted butter until soft and fluffy.
- Prepare the Bacon: Once the bacon is cooked and crispy, drain it on paper towels to remove excess fat. Then roughly chop the bacon into bite-sized pieces.
- Toast and Butter Bagels: Toast the 4 mini bagels until golden and warm. Spread each toasted bagel generously with salted butter while still hot.
- Assemble the Bagel Bites: Layer the scrambled eggs evenly on top of each buttered mini bagel. Then add the 4 ounces of shredded cheddar cheese over the eggs, followed by the chopped bacon pieces.
- Broil to Finish: Place the assembled bagel bites under the broiler for about 1-2 minutes, just long enough to melt the cheddar cheese and rewarm the eggs. Watch carefully to avoid burning. Once cheese is melted and bubbling, remove and serve immediately.
Notes
- Adding a little milk, cream cheese, or cottage cheese to the eggs makes them creamier and more flavorful.
- Use mini bagels for perfectly sized bite portions, but regular bagels cut in halves or quarters can also work.
- Keep a close eye during broiling to prevent the cheese from burning.
- Substitute cheddar with any other favorite cheese like mozzarella or pepper jack for a different flavor.
- Can be prepared ahead by cooking bacon and eggs in advance, then assembling and broiling just before serving.
