  • Author: Jake
  • Total Time: 8 hours 10 minutes (including chilling time)
  • Yield: 2 servings 1x
  • Diet: Vegetarian

Description

This refreshing Bircher muesli recipe combines grated apple, banana, and a hearty mix of oats, seeds, and nuts soaked in creamy natural yogurt for a wholesome, nutritious breakfast that’s perfect to prepare overnight.

Ingredients

Scale

Dry Ingredients

  • 50g jumbo porridge oats
  • 25g mixed seeds (such as sunflower, pumpkin, sesame and linseed)
  • 25g mixed nuts (such as Brazils, hazelnuts, almonds, pecans and walnuts), roughly chopped
  • ¼ tsp ground cinnamon
  • 25g organic sultanas

Fresh Ingredients

  • 1 eating apple, coarsely grated
  • 1 medium banana, sliced

Dairy

  • 100g full-fat natural bio-yogurt

Liquids

  • 100ml cold water

Instructions

  1. Prepare the base: Put the coarsely grated apple into a bowl. Add the jumbo porridge oats, mixed seeds, half of the roughly chopped mixed nuts, and ground cinnamon. Toss these ingredients together very well to distribute everything evenly.
  2. Add yogurt and water: Stir in the full-fat natural bio-yogurt and 100ml of cold water into the oat and apple mixture, ensuring all ingredients are well combined.
  3. Chill: Cover the bowl and place it in the refrigerator to chill for several hours or ideally overnight. This allows the oats and seeds to soak and soften, and the flavors to meld beautifully.
  4. Assemble and serve: When ready to serve, spoon the soaked muesli into two bowls. Top each with the sliced banana, the remaining mixed nuts, and organic sultanas for added texture and sweetness.

Notes

  • Soaking overnight improves the texture and digestibility of oats and seeds.
  • Use full-fat natural yogurt for creaminess, or substitute with Greek yogurt for a thicker consistency.
  • Feel free to customize the nuts and seeds according to preference or availability.
  • To make it vegan, substitute the yogurt for a plant-based alternative like coconut or almond yogurt.
  • For added sweetness, drizzle with a small amount of honey or maple syrup if desired.
