  • 3 tablespoons Brown Sugar

Wet Ingredients

  • 2 cups Milk
  • 2 Eggs
  • 1 teaspoon Vanilla Extract

Instructions

  1. Caramelize Bananas: Heat 1 tablespoon of butter over medium-high heat in a cast iron skillet or large frying pan. Add 3 bananas and cook for about three minutes on each side until they begin to brown and caramelize. Remove the skillet from heat once bananas are caramelized.
  2. Prepare Baking Dish: If using a cast iron skillet, bake directly in it. Otherwise, grease a medium-sized baking dish and transfer the caramelized bananas into it. Evenly layer 2 1/2 cups of frozen mixed berries over the bananas.
  3. Mix Dry Ingredients: In a separate bowl, combine 1/2 cup medium grind bulgur wheat, 1/2 cup old fashioned rolled oats, 3 tablespoons brown sugar, 1/4 teaspoon salt, and 1 teaspoon ground cinnamon. Sprinkle this mixture evenly over the berries in the dish.
  4. Combine Wet Ingredients: In another bowl, whisk together 2 cups milk, 2 eggs, and 1 teaspoon vanilla extract until well blended. Slowly and evenly pour this mixture over the bulgur and oats mixture in the baking dish.
  5. Add Coconut Flakes and Bake: Sprinkle 1/2 cup unsweetened coconut flakes evenly on top. Place the baking dish or skillet in a preheated oven at 375°F (190°C). Bake for 45 to 60 minutes, or until the top is lightly browned and the custard is set.
  6. Serve: Once done, let the bake cool slightly. Serve warm or cold, optionally drizzled with honey or topped with a dollop of Greek yogurt and fresh berries for added flavor and texture.
