Ingredients
Scale
For the French Toast
- 4 slices White Bread
- 200 milliliters Thickened Cream
- 1 Egg
- Coconut Oil, as needed for frying
For the Toffee Sauce
- 4 tablespoons Unrefined Dark Brown Sugar
- 2 teaspoons Butter
- 250 milliliters Fresh Cream
For the Caramelized Bananas
- 2 Bananas
- 5 grams Unrefined Dark Brown Sugar
For Garnish
- Pinch of sea salt flakes
- Toasted coconut, to scatter
- Dollop of whipped cream (optional)
Instructions
- Prepare Egg Mixture: In a bowl, whisk together the beaten egg and thickened cream until fully combined to create the custard base for dipping the bread.
- Fry the French Toast: Dip each slice of white bread into the egg and cream mixture, coating fully. Heat coconut oil in a skillet over medium heat and fry each slice until golden brown and slightly crisp on both sides. Remove and keep warm.
- Make the Toffee Sauce: In a nonstick saucepan over medium heat, combine dark brown sugar, butter, and fresh cream. Stir continuously until the sugar dissolves and the mixture emulsifies. Reduce the sauce by half to thicken it.
- Caramelize the Bananas: Preheat the grill at its highest setting. Peel the bananas and slice them lengthwise. Place on a lined baking sheet with the cut side up. Sprinkle with dark brown sugar and grill under the element until the sugar caramelizes and hardens slightly. Watch closely to prevent burning.
- Assemble the Dish: Stack two slices of the French toast diagonally on a plate. Pour over the warm toffee sauce.
- Add Banana and Garnish: Arrange the caramelized banana slices in a crisscross pattern on top of the French toast. Scatter a pinch of sea salt flakes and toasted coconut over the dish. Optionally, add a dollop of whipped cream to finish.
- Serve and Enjoy: Serve immediately while warm and enjoy your indulgent Banana Toffee French Toast.
Notes
- Use white bread with a sturdy texture to prevent sogginess.
- Monitor the bananas closely under the grill to avoid burning as the sugar caramelizes quickly.
- For extra richness, substitute some cream with half-and-half.
- Toasted coconut adds a delightful crunch—toast coconut flakes in a dry pan until golden.
