  • 1 cup Jackfruit, thinly sliced
  • 1/2 cup Vegan Butter
  • 1/4 cup Almond Butter
  • 2 Eggs
  • 1/2 cup Nut Milk (almond, cashew, or other plant-based milk)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to get it ready for baking.
  2. Prepare Loaf Tin: Spray a loaf tin with coconut oil cooking spray, then line it with parchment paper overlapping the long ends and spray again to ensure easy release.
  3. Mash Bananas: In a medium bowl, mash 2 of the bananas until smooth. Slice the remaining banana in half lengthwise to use for decorating the top of the bread.
  4. Slice Jackfruit: Thinly slice the jackfruit into ½-inch thick slices for incorporation into the batter.
  5. Mix Dry Ingredients: In a large bowl, combine cassava flour, coconut sugar, white sesame seeds, baking soda, and salt. Mix thoroughly and set aside.
  6. Melt Butters: In the microwave, melt the almond butter and vegan butter together, starting with 30 seconds and adding more time if necessary. Whisk until smooth.
  7. Combine Wet Ingredients: Add the melted butter mixture to the mashed bananas, then mix in nut milk and eggs, stirring well to combine.
  8. Blend Mixtures: Pour the wet banana mixture into the dry ingredients bowl and mix until you achieve a smooth batter without lumps.
  9. Add Jackfruit: Gently fold the sliced jackfruit into the batter to distribute evenly.
  10. Fill Loaf Tin and Decorate: Pour the batter into the prepared loaf tin. Place the halved banana slices on top of the batter for decoration.
  11. Bake: Bake in the preheated oven for 45-50 minutes. Begin checking at 45 minutes by inserting a cake tester or skewer; if it comes out clean, the bread is done. If not, continue baking and check every 5 minutes.
  12. Cool and Serve: Once baked, let the bread cool completely in the tin. Then remove from the tin, slice, and serve.
