  • Author: Jake
  • Total Time: 30 minutes
  • Yield: Approximately 20 biscuits 1x
  • Diet: Vegetarian

Description

Anzac Biscuits are traditional Australian cookies made with rolled oats, coconut, and golden syrup, offering a crunchy and chewy texture. Perfect for teatime or a sweet snack, these biscuits are simple to prepare and bake to golden perfection.

Ingredients

Scale

Dry Ingredients

  • 1 cup Old Fashioned Rolled Oats
  • 1 cup All-Purpose Flour
  • 1/2 cup Coconut (desiccated)
  • 1/2 teaspoon Baking Soda

Wet Ingredients

  • 125 gram Butter
  • 2 tablespoons Golden Syrup
  • 1 tablespoon Water

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, combine 1 cup of Old Fashioned Rolled Oats, 1/2 cup of Coconut, and 1 cup of All-Purpose Flour thoroughly to ensure an even distribution of all the dry components.
  2. Melt Butter and Golden Syrup: In a saucepan over low heat, melt together 125 grams of Butter and 2 tablespoons of Golden Syrup, stirring gently to avoid burning the mixture.
  3. Add Baking Soda Mixture: Remove the saucepan from heat and stir in 1/2 teaspoon of Baking Soda dissolved in 1 tablespoon of Water. Stir gently—the mixture will foam slightly, which helps with the biscuit texture.
  4. Combine Mixtures: Pour the butter and syrup mixture over the dry ingredients. Mix everything well until fully combined to form the biscuit dough.
  5. Shape Biscuits: Using about a tablespoon of dough per biscuit, press the mixture in your hands to form a ball, then place it onto a baking tray lined with baking paper. Space the biscuits adequately as they will spread slightly during baking.
  6. Bake: Preheat the oven to 350°F (180°C). Bake the biscuits on the tray for approximately 20 minutes or until they turn a golden brown color and are firm to the touch.
  7. Cool and Serve: Once baked, remove from the oven and allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely. Serve and enjoy your homemade Anzac Biscuits!

Notes

  • Golden Syrup can be substituted with light corn syrup or honey if unavailable, though flavor may vary slightly.
  • For a crunchier biscuit, bake a few minutes longer, watching carefully to prevent burning.
  • Ensure the baking soda is fully dissolved in water before mixing with butter to activate the leavening properly.
  • Store the biscuits in an airtight container to keep them fresh and crisp for up to one week.
