  • 1 small butternut squash, roughly chopped
  • 1 sweet potato, roughly chopped
  • 1 red pepper, roughly chopped
  • 2 red onions, cut into 8 wedges each
  • 200g Jersey Royals or baby potatoes

Seasonings

  • 24 garlic cloves, lightly bashed
  • A few thyme sprigs
  • 1 tbsp olive oil

Instructions

  1. Prepare the Vegetables: Roughly chop the butternut squash, sweet potato, and red pepper. Cut each red onion into 8 wedges. Rinse and dry the Jersey Royals or baby potatoes.
  2. Season the Vegetables: Place all the chopped vegetables, garlic cloves, and thyme sprigs in the air fryer basket. Drizzle with 1 tablespoon of olive oil and shake or toss thoroughly to coat all pieces evenly in the oil and aromatics.
  3. Initial Roasting: Roast the vegetables in the air fryer at 200°C (392°F) for 20 minutes. This will start the cooking process and allow the veggies to soften and pick up a roasted flavor.
  4. Shake and Continue Roasting: After the first 20 minutes, shake the basket to turn the vegetables for even cooking. Roast again at 200°C for an additional 10 to 20 minutes until all the vegetables are tender and golden brown. The total roasting time should be between 30 and 40 minutes depending on your air fryer and vegetable size.

  • You can experiment with other vegetables such as carrots or parsnips for variation.
  • Use fresh thyme sprigs for the best aroma; dried thyme can be substituted but use sparingly.
