Crispy Halloumi Tacos with Spicy Slaw Recipe

Introduction

Crispy halloumi tacos with spicy slaw are a delightful twist on traditional tacos, combining salty cheese with a crunchy, tangy slaw. This quick and easy recipe is perfect for a flavorful weeknight meal or a casual gathering.

Four soft flat tortilla shells are folded and placed on a metal tray, each filled with three layers of ingredients: the bottom layer consists of roasted green zucchini slices and golden-brown fried tofu cubes, the middle layer features shredded white cabbage and carrot slaw, and the top layer is sprinkled with fresh green cilantro leaves. Two lime wedges are placed on the tray next to the tacos. The tray sits on a light pink cloth with a mustard yellow wavy border, set against a white marbled textured surface. Two glass cups of water are also partly visible on the left side. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 200g halloumi, cut into 1cm cubes
  • 1 tbsp plain flour
  • 2 tsp Cajun-style seasoning
  • 2 tbsp olive oil
  • 1 Morrisons Courgette, halved, then sliced into half-moons
  • 8 mini plain tortilla wraps
  • 1 lime, cut into wedges
  • 1 green chilli, thinly sliced
  • ¼ white cabbage, shredded
  • 1 carrot, grated
  • 4 tbsp mayonnaise
  • handful of coriander, chopped

Instructions

  1. Step 1: In a bowl, combine the halloumi cubes with the plain flour, Cajun-style seasoning, and a pinch of salt and pepper. Toss well to coat evenly.
  2. Step 2: Heat the olive oil in a frying pan over medium-high heat. Fry the coated halloumi cubes for 4-6 minutes until they are crispy and golden all over. Remove from the pan and set aside on a plate.
  3. Step 3: In the same pan, add the courgette slices. Season with salt and pepper and fry for 6-8 minutes until soft and golden.
  4. Step 4: Meanwhile, prepare the slaw by mixing the shredded cabbage, grated carrot, mayonnaise, green chilli, coriander, and some seasoning together in a bowl.
  5. Step 5: Warm the tortilla wraps in a dry frying pan for about 30 seconds on each side or microwave them for 1 minute until soft and pliable.
  6. Step 6: Assemble the tacos by placing the crispy halloumi and fried courgette onto each tortilla. Top with a spoonful of the spicy slaw, then serve with lime wedges for squeezing over just before eating.

Tips & Variations

  • For extra heat, add more sliced green chilli or a sprinkle of smoked paprika to the slaw.
  • Try using other firm cheeses like paneer if halloumi is unavailable.
  • Substitute mayonnaise with Greek yogurt for a lighter slaw dressing.

Storage

Store any leftover components separately in airtight containers in the refrigerator for up to 2 days. Reheat the halloumi and courgette gently in a pan to maintain crispness. Assemble the tacos fresh before serving to keep the wraps from becoming soggy.

How to Serve

Four soft tortillas are placed on a silver tray, each filled with layers starting from small golden-brown crispy cubes, followed by slices of cooked green zucchini, and topped with a mix of finely shredded white cabbage and some green herbs. A wedge of green lime sits near the bottom left corner of the tray. The tray is set on a cloth with pink and mustard-yellow decorative borders.
